The Sawmill Restaurant is an ancient building transformed into a restaurant, one of the most
iconic of Folgaria, with offers of local products from simple cuisine
of our grandparents.
We produce pasta, meat...polenta every day!
We wet the stockfish all (all!) weeks. The strudel is handmade with the
shortcrust pastry and Renette apples from Mezzomonte. Together we contribute to the
production of the menu consisting of five appetizers, six first courses, six main courses and
a wine list with fifty labels.

My name is Matilde Fiorentini and I live in a beautiful and very ancient place. It is
of an ancient water sawmill that after centuries of adventure has been transformed into
a restaurant. The person who allowed this transformation is called
Adriano Cappelletti. [...] The construction should be more than 500 years old and later
who knows what passages arrived at the end of the 1800s in the property of Mr. Giulio

So history took a different path and allowed us to live and work in
a place that many customers say is fantastic and also a bit mysterious, like
all ancient buildings. Think that in the cellar on a beam it says: "Carlo

One important thing is that the entire construction has been preserved almost like this
as it was. In fact, the maintenance work was many and difficult, because after
long time the walls, which are of stones and mortar, crumbled[...]: it was necessary to use

home safely and we too can live in a healthy and dry place. All
they can look a bit admiring an old house but also sturdy and well
