The Pejo Craft Brewery is a brewery strongly linked to the territory. The use of water from the Val di Pejo makes its beers unique.
He was born in Cogolo, in the family's hometown, nestled in the mountains of the Pejo Valley, in the heart of the Stelvio National Park. All beers are produced by hand, using the renowned water of the Pejo springs as the main raw material, enhanced by quality malts and hops, with the method of refermentation in the bottle. This means that after a first fermentation in the tank, the beer is bottled, unfiltered and unpasteurised, to allow the yeasts to carry out the second fermentation. This process guarantees a natural carbonation and the development of unique fermentative aromas. The yeasts that remain in the bottle give the typical veiled appearance and guarantee great longevity, given their antioxidant properties. Marco Framba, after finishing his studies in Oenology at the Agricultural Institute of San Michele, began to travel both in Italy and abroad to gain experience in the production of white and red wines. After returning permanently to Italy, he began to take an interest in a field related to his preparation, namely the production of Craft Beer.
