Born from the Pegolotti family's passion for breeding and for the art of dairy processing, this farm located in the village of Cogolo, within the Stelvio National Park, processes exclusively milk from the company's cows, which are mainly fed with fodder from the Val di Peio. The serum from the processing is used to supplement the feed of the company's pigs, whose meat is transformed into lucaniche, bacon and speck. The dairy production includes the famous Casolét della Val di Sole, which boasts the Slow Food Presidium brand, as well as yogurt, mozzarella and stracchino.
